Chocolate Cherry Flautas
Cherry Filling : 1 quart Kimmel tart cherries , 1/2 cup water, 1/2 cup sugar, 1 package 10 inch tortilla shells (corn starch and extra water for thickening)
Chocolate Cherry Sauce : 1 cup Kimmel Frontenac Wine, 2 Tbs. sugar, 1/2 cup Kimmel tart cherries, 1 Tbs. butter, 1/2 cup dark chocolate chips (corn starch and extra water for thickening)
Filling: Bring all cherries, water, and sugar to a boil. Boil for 5 minutes. Make a mixture of 2 Tbs. cornstarch and 2 Tbs. water. Add mixture to the boiling cherry mixture and boil until thickened. Remove from heat and cool.
Sauce: Bring wine to a low simmer. Boil for 10 min. Add cherries and boil for 5 min. Mash cherries in wine and remove with slotted spoon (save for garnish if you like). Add sugar to wine mixture until dissolved, then add chocolate and butter, and stir until melted. Mix 1/2 tsp. of corn starch and 1/2 tsp. water in separate bowl, stir well, then add to wine mixture. Boil until thickened.
Heat 2 cups cooking oil in a 2 quart saucepan to 350°. While heating, take 10 inch tortillas and add about 3 Tbs. cherry filling, roll up, and fry until golden brown. Garnish with the sauce, cherries, and powdered sugar.
Chocolate Cherry Sauce will also go great with cheesecake or ice cream!
